Brazilian Black Bean Soup

Yields 8 servings

Ingredients

1 tablespoon olive oil

2 cups ( 1 large ) diced sweet onions

3 cloves garlic, minced

1/2 teaspoon red pepper flakes

2-1/2 cups chicken broth

2 cups Tropicana® Pure Premium or Dole Orange Juice

2 cans (16 oz.) black beans, drained and rinsed

Salt to taste

2  hard-boiled eggs, chopped

3 tablespoons minced parsley

Instructions

  1. In large soup pot heat oil; add onions and saute 3 - 4 minutes. Add garlic and red pepper; continue cooking 1 minute. Add broth and orange juice; bring to a boil, reduce heat and simmer 15 minutes.
  2. Add beans and cook 10 minutes. Remove from heat and cool slightly.
  3. In blender, puree half of the soup and combine with unprocessed soup. Heat and adjust seasonings. Ladle into soup bowls and garnish with a sprinkling of chopped egg and parsley.
