Brazilian Black Bean Soup
Yields 8 servings
Ingredients
1 tablespoon olive oil
2 cups ( 1 large ) diced sweet onions
3 cloves garlic, minced
1/2 teaspoon red pepper flakes
2-1/2 cups chicken broth
2 cups Tropicana® Pure Premium or Dole Orange Juice
2 cans (16 oz.) black beans, drained and rinsed
Salt to taste
2 hard-boiled eggs, chopped
3 tablespoons minced parsley
Instructions
- In large soup pot heat oil; add onions and saute 3 - 4 minutes. Add garlic and red pepper; continue cooking 1 minute. Add broth and orange juice; bring to a boil, reduce heat and simmer 15 minutes.
- Add beans and cook 10 minutes. Remove from heat and cool slightly.
- In blender, puree half of the soup and combine with unprocessed soup. Heat and adjust seasonings. Ladle into soup bowls and garnish with a sprinkling of chopped egg and parsley.
