Gazpacho Cooler
Yields 3 (1 cup servings) servings
Ingredients
1 can (16 oz.) plum tomatoes, drained
1 cup Tropicana Pure Premium® orange juice or Dole® 100% orange juice
1/4 cup sliced scallions
1 cup peeled, seeded, diced cucumbers
1/4 cup green pepper or roasted red pepper chunks
1/4 teaspoon Tabasco sauce
Cucumber or scallion for garnish
Instructions
- Put all ingredients into blender jar; place lid on jar securely. Puree until smooth.
- Pour gazpacho over ice in a glass and serve or refrigerate until ready to serve. Garnish with a whole scallion or cucumber slice if desired.
- Makes 3 (1 cup servings)
