Oat Bran 'n Ginger Waffles

Oat Bran ’n Ginger Waffles

Ingredients

2 large egg whites

1 cup Quaker® Oat Bran hot cereal, uncooked

1 cup all-purpose flour

1/2 cup sugar

1 teaspoon ginger

1/2 teaspoon cinnamon

1/2 teaspoon baking soda

1/2 teaspoon baking powder

1/4 teaspoon ground cloves

1/4 teaspoon salt

1 cup fat free milk

3 tablespoons vegetable oil

2 tablespoons dark molasses

Instructions

  1. Heat waffle iron according to manufacturer's instructions.
  2. In small bowl, beat egg whites until soft peaks form; set aside. In large bowl, combine oat bran, flour, sugar, ginger, cinnamon, baking soda, baking powder, cloves and salt; mix well.
  3. Wisk together milk, oil and molasses until well blended. Add to dry ingredients, mixing just until moistened. Do not overmix -- there should be lumps.
  4. Fold egg whites into batter. Lift waffle iron lid; pour about 1 cups of batter onto surface of waffle iron grid. Close the lid; bake until steam no longer escapes from sides of the iron and waffles are deep golden brown.
  5. Serve with fruit or Aunt Jemima Lite or Butter Lite Syrup, if desired.
