Warm chicken Salad with Tangerine, Tarragon & Arugula

Ingredients

12  ounces chicken breasts, boneless and skinless

2 tablespoons fresh tarragon leaves

1/4 cup Tropicana Pure Premium Tangerine Orange Juice

1/2 teaspoon minced garlic

1/4 teaspoon Kosher salt

1/2 teaspoon freshly ground black pepper

1 teaspoon olive oil

1 cup Tropicana Pure Premium Tangerine Orange Juice

1 small red onion, peeled and thinly sliced in rings

3/4 cup Tropicana Pure Premium Tangerine Orange Juice

2 tablespoons red wine vinegar

1 teaspoon olive oil

1 teaspoon Dijon mustard

1/2 teaspoon garlc, chopped

1/4 teaspoon salt

1/4 teaspoon black pepepr

1 tablespoon fresh tarragon leaves

6 cups arugula, washed and dried

1 cup mandarin orange slices (11-oz. can drained)

1 tablespoon fresh tarragon leaves

Instructions

  1. Place chicken breasts in a large bowl. Season the chicken with 2 tablespoons tarragon, 1/4 cup Tropicana Pure Premium Tangerine Orange Juice, garlic, salt and pepper.
  2. Warm olive oil in large saute? pan; add chicken breast and saute? over medium heat for 3 - 4 minutes.
  3. Turn chichen breast over; add 1 cup Tangerine Orange Juice, simmering for 4 - 5 minutes until cooked through.
  4. In a medium bowl whisk together 3/4 cup Tangerine Orange Juice, red wine vinegar, olive oil, Dijon mustard, garlic, salt, pepper, and tarragon.
  5. Arrange arugula on the plates along with a warm chicken breast. Drizzle with salad dressing sauce. Garnish each chicken breast with remaining tarragon leaves.
