Ingredients

1  medium-sized tomato, thinly sliced

4  Quaker Butter Popped Corn Rice Cakes

1/2 cup 1% low-fat cottage cheese

2 tablespoons shredded carrot

1 1/2 teaspoons chopped chives or green onions

1/4 teaspoon dried basil

Paprika (optional)

Instructions

  1. Place 2 or 3 slices of tomato on each Butter Popped Corn Rice Cake
  2. Combine cottage cheese, carrot, chives and basil and mix lightly
  3. Top tomato slices with cottage cheese mixture.
  4. Garnish with paprika, if desired.
